(my first) harvest salad

Today I pulled my first beets out of the ground! And here’s what I made with them, plus a tiny carrot I pulled just to see how big they are.

Arugula Salad with Beets, Bacon, Carrots, and Parmesan Cheese

I just tosed the arugula with olive oil, lemon juice, salt, and pepper. The beets were cut in half, sprinkled with olive oil, salt, and pepper, and grilled until just tender. The carrot was so small it was grilled whole. The beets and carrot were sliced and tossed into the salad along with some cooked bacon and shaved parmesan cheese.

The salad was quite good. We ate it with whole wheat challa bread and butter and I felt like a farmer for a day.
